Restaurant work is its own discipline within commercial electrical service, because the equipment, the inspection expectations, and the operating hours all differ from a typical office or retail space. Everything below reflects what we actually see in kitchens across this area, not a generic list.
Why Restaurant Electrical Work Is Its Own Specialty
A kitchen packs more electrical load into a small footprint than almost any other commercial space of the same size. Cooking equipment, refrigeration, ventilation, dish machines, and prep equipment all run at once during service, often on circuits that were sized years ago for a different kitchen layout or a previous tenant's concept. Add the heat and grease that build up around cooking equipment, the water that is constantly present near sinks and dish areas, and the fact that most of this equipment cannot simply be shut off during a busy shift, and it becomes clear why kitchen electrical work calls for a different level of attention than a typical commercial space.
We have walked into more than one kitchen where a previous contractor solved a capacity problem by sharing circuits that should never have been combined, or by installing equipment that technically worked on day one but was never really sized for what the kitchen would actually draw once it opened. Untangling that kind of shortcut, safely and without shutting a kitchen down longer than necessary, is a big part of what restaurant electrical work actually looks like in practice.
Dedicated Circuits for Kitchen Equipment
Commercial kitchen equipment is built to run on its own dedicated circuit, sized specifically for that piece of equipment rather than shared with anything else. Ranges, ovens, fryers, griddles, dish machines, ice machines, and reach-in and walk-in refrigeration compressors all fall into this category. Sharing circuits between pieces of equipment, or between equipment and general receptacles, is one of the most common reasons a kitchen experiences nuisance tripping during service, exactly when the equipment is needed most.
Getting circuits right in a kitchen means knowing the actual electrical draw of every major piece of equipment, not just assuming based on similar equipment elsewhere, because manufacturers vary and even the same model can be specified with different electrical requirements depending on options. We pull equipment specification sheets before sizing circuits for new or replacement equipment, and we do not guess at what a piece of cooking equipment needs based on what looks similar to something we installed somewhere else.
Hood Systems, Suppression and the Shunt Trip Breaker
Kitchen exhaust hoods over cooking equipment are tied into a fire suppression system, and that system is required to shut off power to the cooking equipment beneath the hood automatically if the suppression system activates. The electrical component that makes this happen is typically a shunt trip breaker, wired so that a signal from the suppression system's activation trips the breaker and cuts power to the equipment circuits under the hood, even though the breaker itself sits in the electrical panel some distance away.
Wiring a shunt trip circuit correctly means coordinating directly with the fire suppression contractor, because the electrical side and the suppression side have to agree on exactly what triggers the shutoff and which circuits it covers. We have seen shunt trip systems installed where the wiring was technically connected but the trip signal was never actually verified against the suppression system, which means it might not have worked when it mattered. We test the actual function of the shunt trip as part of any hood or suppression related work, not just confirm that wires are landed on terminals.
Walk-In Coolers and Freezers
Walk-in refrigeration units draw significant power through their compressors, evaporator fans and, in freezers, defrost heaters, and all of that typically needs to be on dedicated circuits sized for the specific unit. A walk-in that keeps tripping its breaker is rarely a coincidence. It usually means the circuit was undersized for the unit, the compressor is drawing more current than it should because of a mechanical problem, or the unit is on a shared circuit that was never appropriate for a refrigeration load in the first place.
We also see walk-in electrical problems caused by the environment the equipment lives in rather than the equipment itself. Condensation and washdown water near the unit's electrical components corrode connections over time, especially in an area that gets hosed down regularly as part of cleaning. Defrost heater circuits and their controls fail in ways that are not always obvious until the unit starts icing up or losing temperature, which for a restaurant means product loss on top of the repair itself. We troubleshoot the electrical side and tell an owner clearly when what looks like an electrical problem is actually a refrigeration or mechanical issue that needs a different trade.
Grease, Heat and Equipment Life Near the Panel
Electrical equipment mounted near cooking lines takes a beating that equipment in an office never sees. Airborne grease settles on receptacles, disconnect switches and junction boxes near the cook line, building up a film that attracts more grease and eventually interferes with covers, switches and connections. Heat radiating from cooking equipment ages insulation and plastic components faster than normal, and equipment mounted too close to a range or a fryer degrades faster than the same equipment mounted a reasonable distance away.
Where we can, we place new receptacles, switches and disconnects for kitchen equipment with some thought to keeping them out of the direct grease and heat path, and we specify equipment rated for the environment when it is going in an area that cannot avoid that exposure. On existing kitchens, we clean and inspect equipment that has accumulated grease buildup as part of a service call rather than just addressing the immediate symptom, because a receptacle caked in grease is a fire risk on its own, separate from whatever brought us there.
GFCI Protection Near Sinks and Wash Stations
Kitchens have water everywhere, prep sinks, hand sinks, dish machines, mop sinks, and the general washdown that happens throughout a shift, and ground-fault circuit interrupter protection near that water is not optional. Any receptacle within reach of a sink or a wet work area needs GFCI protection, and health inspectors and fire inspectors both look for it during their respective reviews.
We also see GFCI protection that was installed correctly at first but has since started tripping intermittently, which is usually a sign of a genuine ground fault developing somewhere in the circuit rather than a nuisance to be worked around by resetting it repeatedly. Repeatedly resetting a tripping GFCI without finding out why it is tripping is a habit that eventually leads to a bigger problem, and we trace the actual cause rather than treating the reset button as a fix.
Working Around Service Hours and a Live Kitchen
Very few restaurants can afford to close for electrical work, and most of what we do in a kitchen happens around a schedule the operator gives us rather than one that is convenient for us. That might mean working before the kitchen opens for prep, after close once the last ticket is out, or during a slower stretch between meal services, and it almost always means being specific in advance about which circuits and which equipment will be affected and for how long.
Where a job allows it, we stage the work so only the affected equipment loses power rather than the whole kitchen, which lets a restaurant keep most of its line running while we address one piece of equipment or one section of the kitchen. When a job genuinely requires the panel to be shut down completely, we plan that for the restaurant's slowest window and communicate a realistic sense of what the work involves, without promising a specific completion time that depends on what we find once the panel is open.
Health Department and Fire Marshal Inspection Expectations
Restaurants answer to more than one inspector, and the electrical work we do often gets looked at from both the health and fire safety sides. Health inspections generally focus on things like GFCI protection near sinks and wash areas, proper equipment installation that supports sanitation, sealed penetrations, and equipment that is mounted and wired in a way that does not create a cleaning or pest problem. Fire inspections focus on the hood suppression tie-in, exit lighting, proper equipment clearances, and whether electrical equipment has been installed and maintained in a way that does not create an ignition source near grease and heat.
We build both of those expectations into how we do kitchen work, not as an afterthought before an inspection, but as part of how the job gets planned from the start. A shunt trip that has never been function tested, a receptacle without GFCI protection near a sink, or equipment installed in a way that blocks required clearance are all things we flag and correct proactively rather than waiting for an inspector to write them up.
Panel Capacity When a Kitchen Grows
Menus change, equipment gets added, and a kitchen that was electrically adequate when it opened often is not adequate five or ten years later once a few pieces of equipment have been added without anyone stepping back to look at total load. A new piece of cooking equipment, an added reach-in cooler, or a second dish machine can push a panel that was already close to capacity into a state where it trips under normal service load rather than only during unusual demand.
Before recommending a panel upgrade, we do an actual assessment of what the kitchen draws today and what it is likely to need if the operator has plans to add equipment, rather than defaulting straight to a bigger panel as the answer. Sometimes the fix is redistributing existing circuits more sensibly. Sometimes the service genuinely has outgrown what it was originally sized for, and a panel or service upgrade is the honest answer. Older Buildings and Retrofitted Restaurant Spaces
A large share of restaurant electrical work happens in buildings that were not originally built as restaurants. A former retail space, an old bank branch, a strip mall unit that has changed concepts several times, all of these come with electrical infrastructure that was designed for a different kind of tenant and has been patched over by whoever occupied the space before. Kitchen equipment loads simply were never part of the original design in a lot of these buildings.
When we work in a converted space, we start by figuring out what is actually there rather than trusting what a previous contractor's paperwork says should be there, because those two things frequently do not match after a building has passed through several tenants. That assessment shapes whether a new concept can open on the existing service or needs an upgrade before the kitchen equipment goes in, and it is a conversation worth having during lease negotiation and design, not after equipment has already been ordered.
Signage, Dining Room and Bar Lighting
Restaurant electrical work is not limited to the kitchen. Dining room lighting sets the mood for the whole operation and usually needs dimming controls that actually work smoothly with the fixtures installed, not the flicker and buzz that happens when a dimmer is mismatched to the lamp type. Bar areas add their own electrical needs, dedicated circuits for ice machines, blenders, and refrigeration behind the bar, along with lighting that has to hold up to spills and constant use.
Exterior and interior signage runs on its own circuits, often with timers or photocells controlling when it activates, and a sign that flickers or will not stay lit is frequently a failing transformer rather than a problem with the sign face itself. Emergency and Exit Lighting in a Restaurant
Exit signs and emergency lighting are required in restaurants as in other commercial occupancies, and fire inspectors check that this equipment actually functions, not just that it is present. Battery backup units built into exit signs and emergency fixtures need periodic testing, because the battery inside them degrades over time and a unit that looks fine with power connected can fail the moment utility power actually drops.
We test emergency lighting function as part of restaurant service calls when we are already in the building, and we replace failing battery packs before they become the reason an inspection gets flagged. A dark dining room during a power outage is a life safety issue for anyone trying to find the exit, not just a code compliance checkbox, and we treat it that way.
We also check that emergency lighting actually illuminates the paths people would need during an evacuation, kitchen exits, dining room exits, and any employee-only exit near the back of the house, rather than only the fixtures directly above the front door. A restaurant with a dark walk-in area or a dim back hallway during an outage has a gap in coverage that a quick fixture-by-fixture test will catch, and we would rather find that during a routine visit than have it discovered during an actual emergency.
